Nicole has worked as a Dietitian in New Zealand, the UK and Australia in a variety of clinical areas and predominantly in Diabetes.
After completing her Masters of Dietetics in New Zealand in 2012 she worked for three years at Wellington Hospital and with the NZ School of Dance. She then worked overseas for 2 years in the UK and Cyprus for the NHS and British Military before moving to Brisbane, Australia in 2018. She has worked at the Queensland Diabetes and Endocrine Centre at Mater Hospital and joined MacIntyre Health in 2019. Nicole now lives on the Gold Coast and provides clinics in both Brisbane, the Gold Coast and Online with telehealth.
She is currently the convenor of the Queensland Diabetes Dietitians interest group and mentors other dietitians in the area. Nicole is part of a group writing guidelines for type 1 diabetes and disordered eating.
Nicole has a client-focussed approach and will work with you to achieve your personal goals. She keeps herself up to date with latest diabetes technologies and dietary tools to find what works for you.

- Eating Disorders and disordered eating behaviours
- Paediatric Diabetes
- Mental Health
- Pregnancy nutrition
- Weight management
- Gastrointestinal issues such as Gastroparesis, Coeliac Disease and Irritable Bowel Syndrome and is a trained to deliver the low FODMAP diet
- Sports Nutrition and is an Accredited Sports Dietitian with Sports Dietitians Australia.

Nicole is a keen endurance sportswoman, racing internationally as an Adventure Racer and previously completed half ironman, marathon and cycling events. She loves helping new people, especially women into the sport of Adventure Racing. On weekends you will find her exploring in the beautiful Queensland hinterland, enjoying a surf along the coast somewhere or having friends and family over to enjoy a meal in the evenings.
